Each button mushroom is only 1 carb! So this may not really serve 5 people.

Preheat oven to 350 degrees.
Wash the mushrooms and separate the stems. Set the caps aside on a paper towel to dry. Finely chop the stems.

In a skillet, melt the butter over medium heat. Add salt, pepper, onion, and garlic.
Add the bacon pieces and cook until crispy.
Throw in the mushroom stems, and let them cook for 2-3 minutes.
Transfer to a bowl and then add the cream cheese and the cheddar. Mix well. Stuff each mushroom cap with 1 tbsp of mixture.
Place the stuffed mushrooms into a baking dish. Bake for 25 minutes or until the mushrooms are soft and the cheese is melted.
